Pizza-flower

Otherwise known as “cauliflower pizza”

INGREDIENTS FOR ONE BAKING TRAY

✓ 1 cauliflower
✓ 200 grams chickpea flour
✓ extra-virgin olive oil
✓ tomato puree or mashed broccoli, pumpkin or carrots
✓ rice mozzarella or other vegetable cheese
✓ turmeric or saffron powder
✓ dried oregano, olives, onions, garlic, capers, fresh basil
✓ other seasonings as desired

PREPARATION:

Cut the cauliflower into small pieces and steam it. Drain and mash with a fork. Add the chickpea flour, a pinch of turmeric or saffron and mix well.

Transfer the mixture to a baking tray covered with non-stick paper and shape it into a round shape. Drizzle with a little oil and bake for about 10 minutes at 200 degrees.

Remove from the oven, add the vegetable cheese and garnish with the desired ingredients (oregano, olives, onions, garlic, basil…)

Cook for another 5 to 7 minutes to melt the cheese. Remove from the oven and serve the flower pizza while it is still hot.
